Simply cut up the catfish in smaller pieces, marinate it with fish sauce and lime to drain out its fishy taste, then after some hours marinating it, prepare some eggs in one plate then breading in another.
The breading can be seasoned as you please with chili flakes and powder, Cajun, and some salt and pepper to taste. Dip the fish in the breading then deep fry!

Another recipe that uses catfish is Kare-Kare, a popular Filipino meal that is traditionally made with pork, but catfish can be used as a healthier alternative. To make kare-kare sauce, blanch the veggies (eggplant, pechays, and some sitaws) in a saucepan of salted water. After a while, drain it and proceed to deep fry the catfish until crispy, then sauté some onions, add peanut butter, flour, and garlic, then add the stock and combine until the desired consistency is reached. Once the fish is golden brown, go ahead and take some oyster sauce (or ketchup, if you prefer) to mix until you obtain your favorite sauce flavor, then drop the chili and sliced onions. Mix everything together until the sauce reaches the desired consistency, then serve on a hot sizzling platter topped with an egg and scallions! Then, toss in some chopped tomatoes, a variety of greens such as lettuce and arugula, beans, corns, and add catfish, for protein. For the last catfish meal, you may reproduce a famous dish for kids, Cordon Bleu, but instead of chicken, you can use the catfish’s white flesh, which is high in nutrition!
Begin by filleting the catfish and seasoning it with salt and pepper to taste. Pound it down with a mallet, then pile on the ham and cheese before rolling it up and securing it. Allow it to sit for an hour before beginning the breading.
Add some spices like paprika and garlic powder on it to taste then coat the rolled up catfish with egg and breading then fry it making sure it stays intact.
Cut it into smaller sizes then make a dip using cream, minced garlic, salt, pepper, and hint of tabasco to add some kick into it. Done!
